Trust me on this one...even those who hate the traditional yam dish will love this!!!
I am the resident yam maker in our house. This is the recipe I make every year. I think I double it though.
3 C. cooked, mashed sweet potatoes
1 C. granulated sugar
2 eggs, beaten
1 tsp. vanilla
1 stick butter
Combine mashed potatoes with sugar, eggs vanilla and butter. Pour into buttered casserole dish.
Topping:
1 C. brown sugar
1/3 C. butter softened
1 C. Chopped pecans or walnuts
Combine brown sugar, flour, and nuts, sprinkle over sweet potato mixture. Bake at 350 for 30 min.
* The last 5 minutes, I top it with mini marshmallows until they are golden.
Good luck!
Sorry, sweetie. Never had 'em, never will!
