I've got an amazing one with apples that I love. Email me if you want it because I don't have it on me at the moment.

I am the resident yam maker in our house. This is the recipe I make every year. I think I double it though.

3 C. cooked, mashed sweet potatoes
1 C. granulated sugar
2 eggs, beaten
1 tsp. vanilla
1 stick butter

Combine mashed potatoes with sugar, eggs vanilla and butter. Pour into buttered casserole dish.

Topping:

1 C. brown sugar
1/3 C. butter softened
1 C. Chopped pecans or walnuts

Combine brown sugar, flour, and nuts, sprinkle over sweet potato mixture. Bake at 350 for 30 min.

* The last 5 minutes, I top it with mini marshmallows until they are golden.

Good luck!

I'm making yams this year for the first time too! I will have to steal those ideas other people left! Except I actually love those marshmellows on top! :)
